Green Chile Cheeseburger Soup
Ingredients:
1/2 lb. ground beef
3 Tbsp. butter
3 Tbsp. flour
3/4 cup shredded carrots
3/4 cup yellow onion, chopped
3/4 cup diced celery
1/2 cup fresh parsley, chopped
3 cups diced peeled potatoes
2 cups chicken broth
3 cups Velveeta, diced
1 1/2 cups whole milk
1/2 tsp. salt
1/2 tsp. pepper
1 cup Santa Fe Ole Hatch Roasted Green Chile
1/4 cup sour cream
Directions:
In a large saucepan, cook and crumble beef over medium heat until lightly browned
Drain and set aside. In the same saucepan, sauté onion, carrots, celery and parsley until tender, about 10 minutes
Add potatoes, ground beef and broth. Bring to a boil. Reduce heat, cover and simmer until potatoes are soft, about 15 minutes
Meanwhile, melt 3 Tbsp. butter in a small skillet. Stir in the flour and cook over medium heat, stirring constantly until thickened
Gradually stir in 1/2 cup milk and stir until smooth
Stir the flour mixture into the soup and add remaining milk, cheese green chile and sour cream. Season with salt and pepper
Serve hot with warm tortillas
