Green Chile Breakfast Egg Rolls
Ingredients:
4 Tbsp. flour
4 cups milk
3 cups cooked shredded hashbrowns
3-4 eggs
1/2 cup Santa Fe Ole Hatch Green Chile
1 cup shredded cheddar cheese
salt and pepper to taste
egg roll wrappers
cooking spray
Directions:
Preheat oven to 425 degrees F.
Scramble the eggs in a small skillet until just set.
In a bowl, combine eggs, hash browns, green chile and cheese.
Season with salt and pepper and stir to blend.
Take an egg roll wrapper and put about 1/3 cup of filling just below center.
Fold over one half to make a triangle. You should have about a 1/2-inch part of the bottom exposed.
Brush a little water with your finger along the edge to help seal the roll.
Fold in the 2 sides and roll up into a sealed egg roll. Spray with cooking spray.
Bake 12-15 minutes, until crispy and browned on the outside.
Serve with Chorizo Red Chile Sauce.
