Roasted Hatch Green Chile Tortillas
Ingredients:
1/2 cup Santa Fe Ole Hatch Extra Roasted Green Chile, drained
2 cups flour
1 tsp. baking powder
1/4 cup canola oil
3/4 cup warm water
Directions:
In a medium bowl, stir together the flour, baking powder and salt
Add the green chile and stir until well distributed
Pour in the oil and warm water and stir until a soft dough is formed
Cover and rest 1 hour
After an hour, divide the dough into 6 balls
One at a time, place a dough ball on a lightly floured surface
Pat into a 4 inch circle and roll with a rolling pin from the center until thin and about 8 inches in diameter
Keep the rolled tortillas covered until ready to cook
In a dry cast iron skillet heated on medium high cook 30 seconds on one side,
Flip and cook 30 seconds more
Place cooked tortillas in a basket lined with cloth or a tortilla warmer
Repeat process with remaining balls of dough
Tortillas will keep refrigerated about a week
