Red Chile Beef Stuffed Sopapillas
Ingredients:
Desert Gardens Sopapilla Mix
1 Tbsp. canola oil
1 lb. ground beef
1/2 tsp. garlic powder
1/4 tsp. onion powder
1/2 tsp. salt
1 15 oz. can pinto beans
1 jar Hatch Red Chile Colorado
2 cups cheddar cheese, shredded
shredded lettuce and diced tomatoes for garnish
Directions:
Preheat oven to 400 degrees F.
Prepare sopapillas according to package directions and set aside.
Add oil to a large skillet over medium-high heat.
Add beef and season with garlic powder, onion powder and salt.
Cook until meat is well browned, add beans and stir to combine. Add 1 cup of red chile, stir, and cook until fully heated through.
Split one end of the sopapillas and fill with ground beef mixture and about 2 tablespoons of shredded cheese.
Once they are all filled, place sopapillas in a bakng dish.
Top with remaining red chile sauce and cheese.
Bake 12-15 minutes, until cheese is bubbling.
Garnish with tomatoes and lettuce to serve.
