Red Chile Beef Ramen
Ingredients:
2 1/2 lbs. beef chuck roast
1 white onion, roughly chopped
2 cups water
2 beef bouillon cubes
2 Tbsp. garlic powder
1 Tbsp. onion powder
1 Tbsp. Los Chileros Mexican Oregano
1 Tbsp. cumin
1 Tbsp. Adobo seasoning
1 Tbsp. Hatch Red Chile Powder
consomé:
8 Hatch Red Chile Pods
3 Los Chileros Chipotle Chile Pods
3 roma tomatoes
2 cloves
2 bay leaves
1/2 tsp. Los Chileros Mexican Oregano
1 tsp. cumin
1/2 tsp. cinnamon
2 Tbsp. salt (adjust to taste)
2 limes, juiced
for garnish: diced onion and chopped cilantro
6 packs of ramen noodles, seasoning packet discarded
Directions:
prepare the beef:
Season the roast liberally with all of the seasonings.
Place your pressure cooker on sauté mode and sear beef until browned on both sides.
Cover with water, add bouillon cubes and chopped onion.
Place the pressure on meat mode, cover and cook 1 hour.
Remove and place in a large bowl. Shred the meat using two forks.
for the consomé:
Cut the chiles down the middle and discard the seeds and stems.
Place the chiles, tomatoes, cloves, bay leaves and spices into a stockpot and cover with 3-4 cups of water.
Bring to a rapid boil for 10 minutes.
Remove from heat and allow to cool to room temperature.
Add pepper and tomatoes into a blender with about 1 cup of the cooking water.
Blend on high 1-2 minutes, or until completely pulverized.
Using a fine mesh strainer, strain the chile mixture into another stockpot by pushing through the strainer with a spoon.
Add a little at a time, until all the chile mixture is used.
Add the cooking water to the strainer and continue pushing through with a spoon to extract all the flavor from the chile.
To prepare the ramen, bring 8 cups of water to a rapid boil.
Add the ramen noodles until al dente, 7-10 minutes.
Drain the water from the noodles.
Add desired amount to noodles to a bowl and pour enough consomé over to cover the noodles.
Top with shredded beef and garnish with onion, cilantro and a squeeze of lime.
