Peach & Hatch Green Chile Salsa
Try this salsa with the fresh peaches in season right now.
Ingredients:
4 large peaches, peeled
4 garlic cloves
1/2 red bell pepper diced
1/2 red onion diced
1/3 cup cilantro chopped
1 Tbsp. grated fresh ginger
1/4 cup fresh lime juice
1/3 cup Sante Fe Seasons Roasted Green Chile
Salt & Pepper to taste
Directions:
Combine all ingredients in the bowl of a food processor. Pulse 2 or 3 times, just until ingredients are combined. Don't overmix, as you want a slightly chunky texture.
This salsa is delicious served over grilled fish or chicken. It's also great with Kristi's tortilla chips.
