Hatch Green Chile Turkey Burgers

Ingredients:
1 lb. ground turkey
1/2 cup Santa Fe Ole Roasted Hatch Green Chile
1/4 cup grated onion
juice of 1/2 lime
2 Tbsp. chopped cilantro
2 tsp. chili powder
1 1/2 tsp. ground cumin
pepper jack cheese slices
4 buns, toasted or grilled
guacamole:
1 avocado
2 Tbsp. diced red onion
2 Tbsp. Santa Fe Ole Roasted Hatch Green Chile
juice of 1 lime
1 Tbsp. chopped cilantro
1/2 tsp. ground cumin
1/8 tsp. garlic powder
salt to taste
pickled red onions:
1 red onion, thinly sliced
3/4 cup water
1/3 cup apple cider vinegar
1 Tbsp. honey

Directions:
pickled red onions:
in a medium sized bowl, whisk together water, and honey
Add red onion, cover with plastic wrap and let sit at room temp for an hour
Store in an airtight container in the refrigerator
guacamole:
scoop the flesh of the avocado into a large bowl
Add remaining ingredients and use a fork to mash into the desired consistency
Cover and refrigerate until ready to serve
green chile turkey burgers:
Preheat grill to medium heat
In a large bowl, stir together green chile, onion, lime juice, cilantro and spices
Add turkey and use your hands to combine
Form into 4 patties and place on grill 3-4 minutes per side until cooked through
Durig the last minute of cooking, top with pepper jack cheese
Serve on toasted or grilled buns topped with guacamole and pickled red onions
