Hatch Green Chile Margaritas
Ingredients:
1/2 cup lime juice, freshly squeezed
2 Tbsp. Santa Fe Ole Hatch Green Chiles, chopped
1 cup orange juice, freshly squeezed
4 oz. Cuervo 1800 Tequila, or whichever Tequila you prefer
2 oz. agave nectar
1/2 fresh lime
1 Tbsp. coarse sea salt
1 Tbsp. Tajin seasoning
Directions:
Place the lime juice and green chile in a small bowl.
Using a muddler, muddle the chiles with the lime juice, let sit 1/2 hour
The longer it sits, the more hatch chile is released
If you can, make this the day before and refrigerate until ready to use
Strain the lime/green chile mixture into 2 cocktail glasses
Combine salt and tajin on a small plate.
Take a half of a cut lime and run around the rim of your glasses and dip into the tajin mixture
Strain the lime juice/green chile mixture and pour into a cocktail shaker filled with ice
Add lime juice, orange juice, tequila, and agave nectar. Shake vigorously and pour into glasses
