BEST HATCH GREEN CHILE CORNBREAD WITH CHEESE RECIPE
Ingredients:
1 1/4 cups fine cornmeal
1 1/4 cups flour
1 1/2 tsp. salt
1 tsp. baking soda
1 Tbsp. baking powder
1/4 cup sugar
1/2 cup unsalted butter, softened
1/2 cup sour cream
2 eggs
1 1/4 cups milk
2 cups Santa Fe Ole Hatch Green Chile
1 cup corn kernels
1 cup cheddar cheese, shredded
Directions:
Preheat oven to 400F. Grease a 3 qt. baking dish
In a large bowl, whisk together cornmeal, flour, salt, baking powder and baking soda
In a separate bowl, beat butter and sugar. Add sour cream and eggs and stir to fully combine
Add milk and dry ingredients, a third at a time, alternating wed and dry
Mix in green chile, corn and shredded cheese. Pour into prepared baking dish
Bake at 400F for 35 minutes, until top is browned, and a skewer inserted into the center comes out clean
Cool before serving
