Green Chile Rice (Recipe & Ingredients)
Ingredients:
1/2 cup Hatch Chile Verde
1/2 cup chopped cilantro
1/3 cup chopped yellow onion
2-3 cloves garlic, minced
2 Tbsp. canola oil
1 1/2 cups white rice
2 1/4 cups chicken broth
1/2 tsp. salt
1-2 tsp. fresh lime juice
Directions:
Add chile verde to a blender and puree until smooth
Heat oil in a large sauté pan over medium-high heat
Add rice and cook 4-5 minutes, until rice begins to brown
Add pureed chile verde, chicken broth and salt.
Stir to combine and bring to a boil.
Reduce heat to a simmer and cook, covered on low 15 minutes, until rice is tender, and liquid is absorbed
Remove from heat and let stand 5 minutes.
Fluff with a fork, add lime juice and garnish with additional cilantro to serve
