Green Chile Fundido Taquitos
Ingredients:
1/2 lb. ground chorizo
1 yellow onion, diced
1 cup cheddar cheese, shredded
1 cup Monterey jack cheese, cubed
1/2 cup Oaxaca cheese, shredded
1/2 cup Santa Fe Ole Hatch Green Chile
1 chipotle chile in adobo, finely chopped
16-20 corn tortillas, warmed
sour cream, shredded lettuce and salsa for serving
Directions:
Preheat oven to 450 degrees F
In a large skillet over medium heat, cook chorizo and onion, breaking up the meat as it cooks
Cook until browned, 8-10 minutes. Remove from heat and stir in green chile and chipotle.
Drain any excess grease and set aside
In a bowl, combine all the cheese
Warm the tortillas 30 seconds on the microwave, until pliable
On a baking sheet, rub the tortillas with olive oil.
Spoon 2-3 tablespoons of cheese mixture then roll up and place seam side down on a baking sheet
Take the chorizo mix and stuff it into either end of the taquito to enclose the cheese
Transfer to the oven and bake 5-8 minutes
Flip and bake 5 more minutes until cheese has melted and tortillas are crisp
Remove from oven, top with sour cream, shredded lettuce and your favorite salsa
