Green Chile Chorizo Cornbread
Ingredients:
8 oz chorizo sausage, cooked and crumbled
2 cups self-rising cornmeal
1 14oz. can cream style corn
8 oz. sour cream
1/2 cup milk
1/3 cup canola oil
1/4 cup sugar
1/3 cup Santa Fe Ole Hatch Green Chile
2 eggs
4 green onions, thinly sliced
2 cups cheddar cheese, shredded
Directions:
Preheat oven to 375 degrees F. Butter a 9x9 inch baking dish and set aside
Whisk together the cornmeal, creamed corn, sour cream, milk, oil, sugar, green chile and eggs
Mix in chorizo, 1 1/2 cup cheddar cheese and green onion until just combined
Pour into baking dish and sprinkle the top with remaining cheese
Bake 45 minutes, or until a toothpick inserted in the center shows moist crumbs
