Green Chile Cheese Puffs

Ingredients:
6 Tbsp. butter
3/4 cup water
1/2 cup Hatch Chile Verde
1/2 tsp. salt
1 cup flour
4 eggs
1 1/2 cups sharp cheddar cheese

Directions:
Preheat oven to 425 degrees F.
Combine butter, water, green chile and salt in a medium saucepan.
Bring to a boil over medium-high heat. Reduce heat to medium-low and stir in flour.
Stir vigorously with a wooden spoon untill it looks like paste. Stir andother 2 minutes.
Place the flour mixture in a medium bowl and allow to cool 5 minutes.
Using a wooden spoon or an electric mixer, add eggs, one at a time until incorporated.
Stir in the cheese. You should have a thick, shiny paste.
Using 2 teaspoons, one for scraping and one for spooning, drop the paste onto a baking sheets.
Place the baking sheet in the oven and immediately turn the oven down to 375 degrees F.
Bake 25-30 minutes or until golden brown.
Srve immediately.
