Green Chile and Bacon Quiche
Ingredients:
1 refrigerated pie crust, room temperature
8 slices of bacon, diced
1/3 cup Santa Fe Ole Hatch Green Chile
4 green onions, chopped
1 cup Monterey Jack cheese, shredded
1 cup sharp cheddar cheese, shredded
4 large eggs
1 1/4 cup half & half
1/2 tsp. salt
Directions:
Preheat oven to 425 degrees F
Unfold the pie crust and press into a 9-inch pie dish
Press foil onto the crust to hold shape. Bake 5 minutes.
Remove from oven, remove foil and set aside. Reduce oven temp to 400
Cook bacon in a heavy skillet over medium-high until brown and crisp
Transfer to paper towels to drain. Sprinkle bacon, green chile and green onion over the crust
Mix the cheeses together and add to the crust.
Whisk eggs, half & half and salt in a medium bowl and pour mixture into crust
Bake quiche until a knife inserted into the center comes out clean, 35-45 minutes
Let quiche stand 5 minutes before cutting and serving
