Chocolate Lavender Beignets
Ingredients:
lavender sugar:
1/2 cup sugar
1 tsp. Frolicking Deer Culinary Lavender
Beignets:
3/4 cup lukewarm water
2 1/4 tsp. active dry yeast
5 Tbsp. lavender sugar
1 egg
1/2 cup milk
3 1/4 cups flour
2 Tbsp. cocoa powder, sifted
1/2 tsp. salt
2 Tbsp. unsalted butter, softened
vegetable oil for frying
Directions:
lavender sugar: In a mortar and pestle, crush the lavender. Place in a small bowl
Add the sugar and toss to combine. Store in an airtight container
Beignets:
In a small bowl, combine water, yeast and sugar. Whisk together and set aside 5-10 minutes
until yeast dissolves and starts to froth up. Once the yeast is dissolved, add egg and milk and whisk
To the bowl of a mixer, add the flour and the salt. Add cocoa powder and whisk to combine
Add yeast mixture and butter to the bowl. Using the dough hook, mix until well incorporated
Dough is done when it comes clean from the sides of the bowl
Remove the dough from the mixer and place in an oiled bowl.
Cover with a damp cloth in a warm place and let it sit until doubled in size. 1-2 hours
Roll out the dough in a long rectangle 3/4 inch in thickness. Cut into long strips and then into squares
Add about 3 inches of oil to a deep frying pan. Heat oil to 360 degrees F
Fry beignets 5 or 6 at a time until golden brown on both sides, about 2 minutes per batch
Transfer to a plate lined with paper towels to drain excess oil
Using a small strainer, dust the warm beignets with plenty of powdered sugar
